From muffins to cookies to fritters and everything in between. And since smoothies are my favorite breakfast, I created the best zucchini smoothie recipe as a great way to use up a bumper crop of zucchini! This zucchini smoothie with spinach is a healthy breakfast that’s loaded with protein and nutrients, and tastes like a yummy vanilla & cinnamon milkshake! Plus it’s made with only 7 ingredients in less than 5 minutes.
Zucchini Smoothie: Ingredients & Substitutions
Almond milk. choose your favorite milk: whole, 2%, coconut milk, etc. Zucchini. I suggest using fresh shredded or sliced zucchini. You can also freeze grated or chopped zucchini to use in this recipe. Spinach. Any greens work well in this recipe. I have used half spinach half kale with great results. (check out my green smoothie and spinach smoothie recipes). Frozen Banana. Adds extra sweetness and creaminess. Using frozen also thickens the smoothie. Vanilla protein powder. this can be omitted, but it adds flavor and nutrition. Choose your favorite vanilla protein powder. For a flavorless protein boost, add a scoop of collagen.
