With flavors similar to a Caprese salad topped with rich creamy cheese, this burrata salad recipe is easy and delicious. Burrata – Burrata cheese is soft and extra creamy. If you can’t find burrata, opt for a fresh mozzarella or bocconcini. Tomatoes – Bright red tomatoes fresh from the garden or farmer’s market are the best choices. Cherry tomatoes or grape tomatoes can be cut in half. Greens – Arugula has a bright peppery bite that goes with anything. Choose salad greens like romaine, spinach, kale, or any crispy leaves that hold up well with chunks of tomatoes and cheese. Add in fresh herbs like basil, parsley, or even a bit of fresh dill. Drizzle – Oil and balsamic vinegar (or glaze) are really all this salad needs for dressing. Pesto is a great addition to all of your fave summer salad recipes! If you’d prefer, you can use a balsamic vinaigrette.
Optional Variations
Other add-ins can be thinly sliced fresh peaches, figs, pickled asparagus, red onions, beets, shredded brussels sprouts, olives, or capers. Add a squeeze of lemon juice or a sprinkle of fresh herbs.
