Tips
This recipe starts with a roux (which simply means equal amounts of butter and flour). When adding the liquid, add a little at a time stirring until smooth after each addition. It will be very thick at first. Start with room temperature cream cheese so it is easier to blend in the cream sauce. Dairy can burn easily, so keep the burner on medium and whisk until the sauce is smooth and velvety. If making ahead of time, store the topping separately and add just before baking.
