Pineapple: Use both canned crushed pineapple and pineapple chunks in this recipe. Drain the pineapple well, as it will release juice as it bakes. Cheese: Use cheddar cheese in this recipe, I prefer sharp cheddar for a bolder flavor. Pre-shredded cheese works just fine in this recipe. Topping: Ritz crackers add a buttery crunch to this recipe—other types of crackers can be used.
Variations
Stir in ½ cup of softened cream cheese in Step 2 for an extra creamy casserole. Step 4. Feel free to use your favorite sugar substitute or gluten-free flour blend!

Keep leftover pineapple casserole in an airtight container in the refrigerator for up to 4 days, and enjoy it cold or heat in the microwave if desired. Freeze in a freezer-safe container for up to two months; however, the crackers will be soggy. Feel free to add fresh crackers to the top and pop it under the broiler until the cracker crumbs are crispy and golden brown.
