Posted May 01, 2017, Updated Jul 06, 2024 Breakfast is, hands down, my favorite meal of the day. I think it’s because, in my house, during breakfast peanut butter is always the star of the show. Whether it’s in a smoothie, baked in a bar, or made into a fun healthy breakfast like these Blender Peanut Butter Banana Oatmeal Waffles…peanut butter is the best part of waking up {in my humble opinion}! These gluten-free Oatmeal Waffles are seriously healthy and seriously delicious. They are gluten, dairy and refined sugar-free, have zero butter or oil, and are loaded with fiber and protein! A truly special recipe to make on a lazy Sunday morning, that won’t leave you in a sugary carb-a-licious coma for the rest of the day!
Peanut Butter Banana Oatmeal Waffles: Substitutions
Peanut Butter: any nut or seed butter works well in this recipe. Old-fashioned oats: 1 cup of oat flour is a great substitute for oatmeal. Or, use all-purpose flour. Cornstarch. tapioca flour or all-purpose flour are goo substitutes. Whole milk: 2% milk, half and half, almond milk and coconut milk all work great. Granulated sugar: white sugar, organic cane sugar and coconut sugar are all great choices.
How to Make Banana Oatmeal Waffles
Let’s discuss how to make banana oatmeal waffles. Begin by blending the ingredients in a high-powered blender (Vitamix). Then, cook the waffles in your waffle maker, set to medium high until they are golden brownn.
Serve
Serve these peanut butter oatmeal waffles warm with your favorite toppings. Here are some suggestions:
With a glug of pure maple syrup and pat of butter or cinnamon honey butter. Topped with a dollop of homemade whipped cream. With a side of fresh berries or other fruit Drizzled with Nutella, peanut butter, etc.
When I shot these, I made cute scenes on the waffles for my kids. Full disclosure, that was when I had three kids (now I have 6) and I don’t do things like this anymore! But, I thought I’d share because they were pretty cute, and a fun idea if you have extra energy at breakfast time.
Store
Cool leftover waffles completely, then store them in an airtight container in the refrigerator for up to 5 days. Reheat in the toaster.
Freeze
I suggest freezing these banana oatmeal waffles to keep them fresh. Put cooled waffles in a single layer in an airtight container and freeze for up to 2 months.
