Peaches – Choose heavy and ripe peaches without blemishes. Frozen peaches can be used but should be thawed first to make chopping them easier. Sugar – Jello makes a low-sugar pectin, or you can use your favorite sweetener like Stevia or Monk Fruit, simply adjust the level of sweetness to your preference. Variations – Mix in raspberries, blueberries (or jalapenos! So good on pork!) for a jewel-toned freezer jam! Roasting peaches first gives them a deep, smoky flavor and is a popular method in the South. Add apple pie spice or pumpkin pie spice for a spicier, earthy jam.

Leave about ½” of space at the top of the containers, the jam will expand as it freezes. To prevent freezer burn, use containers that are freezer-safe and recommended for freezing. Glass jars, BPA-free plastic containers, freezer bags (squeeze out excess air before sealing), and silicone containers are excellent choices. Keep freezer jam in the refrigerator for up to 3 weeks or in the freezer for up to one year. Once the freezer jam is thawed, don’t re-freeze it.
