Pickled Mustard Greens Haam Choy
I still have fond memories of my dear mother preparing gai choy (mustard greens) and squeezing it into the large gallon mayonnaise jars my father brought home from the restaurants and resorts he worked in. Haam choy is a favorite Hakka ingredient in many stir-fry dishes and soups. It seemed like we always had a jug of it in the refrigerator.
