Salmon is my daughter Maddy’s all time favorite meal and my husband really loves it too!  It’s one of those dishes I don’t make often so it’s always a treat when we do have it! I don’t eat a ton of salmon so you might be surprised to learn that I absolutely love to catch it!! I haven’t been salmon fishing in literally years however last month, we went on an Alaskan cruise with Princess Cruises and salmon fishing was one of the excursions we took! Princess has tons of shore excursions you can choose from and I have to admit, salmon fishing was the one I was the most excited about (but I definitely LOVED the Glacier Point Wilderness Tour in Skagway too; more on that coming soon)!

It was a beautiful sunny day, the weather was incredible while we were salmon fishing, it was SO warm that many people on our boat were in t-shirts! We set out for fishing and I have to admit, it was one of the most gorgeous places I’ve ever been in my life.  Absolutely breath taking. Snow capped mountains, we saw tons of wild life, eagles, sea otters and several whales. I didn’t catch a salmon that day however I was the first on our boat to catch anything (a little flounder) so I was pretty excited about it even though we didn’t keep it!

While I didn’t catch my own salmon this time, there was certainly no shortage of delicious salmon (and seafood) on the cruise ship! The food on the ship was absolutely delicious in every single restaurant, it would only be natural that I would be inspired to create some great seafood in my own kitchen! In particular, we enjoyed a delicious Hazelnut and Panko-crusted salmon dish on the cruise that I was excited to try at home.  Since my daughter has a nut allergy, we skipped the hazelnuts in this baked salmon recipe and added some extra breadcrumbs! The crust on this salmon recipe is very similar to my baked tilapia recipe or like herb-crusted pork tenderloin but this recipe uses fresh garlic. I love how simple salmon is to cook in the oven or on the grill (like Asparagus Salmon Foil Packets) and not only is it delish, it’s so quick!  Tender and flaky salmon with a lemony garlicky herbed crumb crust. If you’re looking to create a full meal, toss some zucchini, asparagus, bell peppers or broccoli with a bit of olive oil and seasoning right onto the pan with the salmon.  The vegetables will come out perfectly cooked by the time your salmon is  baked! A whole meal in one pan with almost no dishes to wash. That’s a win in my books!

How to Cook Salmon in the Oven

Salmon is lean and should be perfectly tender and flaky when cooked. If you cook it too long it can become dry and unappetizing. The preparation for this baked salmon is fairly simple, usually not more than a few minutes and it cooks quickly making it an ideal meal!

How long to cook salmon in the oven

I doesn’t take very long to bake salmon in the oven.  I prefer a higher temperature for a shorter period of time (I do about 400 degrees for 16ish minutes) but what temp. to cook salmon in the oven is totally up to you based on time allowance and preferences. A 3-4lb salmon filet will cook at:

425°F for 10-12 minutes 400°F for 13-17 minutes 375°F for 18-22 minutes 350°F for 25-30 minutes

Keep in mind a thicker piece of salmon will take towards the longer end and a thinner piece will cook quicker. The FDA recommends an internal temperature of 145°F.
