Fresh strawberries (and peaches) are one of my favorite parts of summer. Berries are my go-to snack year round but even more so in the summer when they’re in season and fresh & ripe. When I have dessert it’s most often cheesecake (chocolate is my second choice). I love a good rich easy cheesecake recipe and this definitely fits the bill! To make it even better, this recipe is completely no bake and delicious (I think I’ve made it about a million times). I’ve made both baked strawberry cheesecake and strawberry cheesecake cupcakes but this is even easier because no oven is required. Any recipe that doesn’t require baking yet can produce such a rich flavorful dessert is a double thumbs up in my book. Since the strawberries aren’t baked, you can taste the fresh and juicy flavor of summer.
