Creamy Avocado Pasta
Who doesn’t love all things pasta? We have used avocado in place of mayonnaise for pasta salads and egg salads and in this dish, it creates a great sauce tossed with hot pasta.
This sauce is easy to make and loaded with fresh flavor. The dish is extra fast, while the pasta cooks you can prep the sauce and it requires no cooking. Add tomatoes, various cheeses, and fresh herbs to change up this dish.
Fresh Ingredients
Fresh ingredients guarantee the freshest, brightest flavors! AVOCADOS are the star of this recipe! They give the pasta its vibrant color, a rich creamy texture and great flavor! SEASONINGS Garlic, basil, & parsley are highlighted with a splash of lemon juice to make all the flavors come to life! And all pesto-type sauces need to have olive oil. PASTA Anything goes. We prefer a long pasta but really, any medium pasta will work too. Try penne or farfalle.
Variations
Add a little chopped spinach, some sliced, sautéed mushrooms, or fresh or roasted tomatoes!
How to Make Avocado Pasta
Avocado pasta sauce comes together so easily, all it takes is a food processor and fresh ingredients! Garnish with extra parm & herbs if desired.
Tips for Creamy Avocado Pasta Sauce
Pasta cooked al dente (cooked a little firm) keeps the dish from getting mushy! Add additional fresh basil to the sauce if you’d like and save some extra for garnish. The addition of lemon to the sauce adds flavor but also keeps the avocado from turning brown. Don’t rinse your pasta, the starches help the sauce stick to it. Pasta water is a bit starchy and can thin out the sauce to your liking but also helps the sauce cling to the pasta. Fresh parmesan and chili flakes are the perfect toppers for this recipe.
