A Fun Family Breakfast

Spruce up the usual bacon and scrambled eggs with this easy chorizo hash for a special for Sunday brunch. In this recipe, the spicy or sweet flavors of sausage are mixed with bacon, eggs, and sweet and smooth Yukon gold potatoes. Create a board of toppings and gather everyone at the table.

Ingredients & Variations

THE MEAT I use a local homemade chorizo sausage. This pork sausage can be either spicy or sweet, choose the flavor that you prefer. Be sure to remove the casing when preparing the sausage for this recipe. Bacon adds a smoky crisp to this recipe. THE POTATOES Yukon gold potatoes have yellowish flesh with a sweet and silky texture. They retain their moisture when pan-frying and are the best choice for this hash. To cut on prep time, you can make this recipe with either leftover roasted potatoes or baked potatoes or even a bag of frozen homestyle hash browns.
