Egg bites take just minutes to prepare and cook quickly too! They’re a great way to enjoy leftover roasted veggies or meat. They reheat well for breakfasts all week long. Skip the takeout line ups (and save money) by making egg bites at home. These egg bites are loaded with nutrition and flavor!
Serve with Crispy Air Fryer Bacon, some Rainbow Fruit Kabobs, and a pitcher of Lemon Water.
Ingredients and Variations
EGGS: Egg bites can be made from a combination of whole eggs, egg whites, or even store-bought liquid eggs in a carton. Easy peasy! Mix in some taco seasoning for Tex-Mex style egg bites! MEAT: Bacon goes hand-in-hand with eggs, but we also like chopped ham, sliced breakfast sausage, even leftover shredded chicken, beef, or pork. VEGGIES: We love ALL the veggies for egg bites! Make sure they are chopped or diced finely so the egg bites stay intact. Whatever works in an omelet, works for egg bites! Try colorful bell peppers, mushrooms, onions, spinach, even diced zucchini!
How to Make Air Fryer Egg Bites
It’s easy to make air fryer egg bites! We use this silicone mold for egg bites (and in the Instant Pot too). You can use a small muffin pan or even small ramekins that fit in your air fryer. If your molds are a different size, they may need a bit more or less time to cook.
Tips for Perfection
Whisk the eggs until they’re a fluffy pale yellow. You should see no bits of white or yolk. Don’t add too many mix-ins or the egg bites won’t hold together. Precook veggies and squeeze out any moisture before adding. Stir the eggs after 7 or 8 minutes. This helps distribute the add ins (or they will sink or float depending on what you’ve added). Eggs will continue to cook after they’ve been removed from the air fryer so do not overcook.
Leftovers
Keep egg bites in a zippered bag or a container in the refrigerator for up to 7 days. Freeze them individually in plastic wrap and then in a zippered bag. Pull one or two out and reheat in a preheated air fryer for about 4 minutes. Or, put the frozen egg bites in a backpack or briefcase and they’ll be thawed by lunchtime!
