Lamb Dopiaza Curry Gosht Dopiaza

I relied on it heavily back when I was working full-time. It’s such an easy but hearty dinner - perfect after a busy day. It requires a lot of onions, but no frying or sautéing of them. This is, for lack of better words, a ‘dump-and-go’ recipe. You throw all the ingredients into a pot, put the lid on and allow everything to simmer away for 1.5hrs, allowing you the time to do all those important things you need to do....

Liangpi’s springy, elastic, and almost slippery texture makes it an ideal candidate for cold noodle dishes, slathered in flavorful sauces with refreshing crunchy vegetables like cucumber and bean sprouts. I recently shared a spicy liangpi recipe, and today, I’m going to show you how to make the noodles! That’s right, you’re gonna learn how to make your own fresh liangpi using just flour, water, and salt. It’s a bit of a process, but if you’re craving these noodles or would like to try them for the first time, it’s a cool bit of “project cooking” with a delicious reward at the end!...

What Is Millet? Millet is one of the world’s oldest cultivated grains. It’s been grown in Northern China for thousands of years! They are small, round yellow grains similar in size to quinoa. It has a slightly nutty, light flavor. Mutton Kunna Gosht Recipe Chinioti Style

Updated: 12th, October 2020 Originally, kunna is made from the mutton shank or mutton leg cut in pieces. But with innovation and an increase in demand, kunna is made commercially with beef and chicken too. I’ve made kunna gosht in a regular pot on the stove but the taste is delicious. It is somewhat similar to Nihari. I personally felt it is very easy to cook and a great escape from the regular mutton stew....

Pakistani Keema Bhuna

The flavor of bhuna keema is distinct and stronger than regular keema curry. I recommend cooking it in a wok or large bottomed vessel like a frying pan which allows plenty of searing surfaces. I used ground lamb to make lamb keema but you can use any red meat. The trick to best keema is to fry the mince until you see a golden browning in qeema (browning) and the oil separates profusely....

Peruvian Chicken Green Sauce

The magic of this Peruvian chicken recipe occurs on two different levels: 1) the marinade and 2) the green sauce. The marinade is full of cumin, paprika, garlic, oregano lemon juice, and vinegar. The combination is slightly citrusy from the lemon, tangy from the vinegar, earthy from the oregano, and spicy––from the cumin, paprika, and garlic. The green sauce is similarly multidimensional––jalapeños, cilantro, garlic, lime, vinegar…these are flavors that were meant to go with roast chicken....
